Dark Chocolate Raspberry Cookies

While I like fresh raspberries, I’m honestly not a fan of artificially flavored raspberry foods. At my friend’s bridal shower last week I won a bag of Hershey’s Raspberry Bliss chocolates during one of the games. I tried to give them away but no one seemed to want them. I thought I would like the taste of the chocolates better if I baked them into some cookies–because cookies make everything better, right? Right!

I like the flavor of fresh raspberries and chocolate so I chopped up the chocolates and mixed them into a dark chocolate cookie dough. The cookies came out great and I actually liked how the raspberry chocolates tasted in the cookie! The cookies are chewy with a deep chocolate flavor, reminiscent of brownies. So even if you aren’t a raspberry lover, you should give these cookies a try–you will be surprised at how delicious these are!

Dark Chocolate Raspberries Cookies

Makes 20 cookies

Ingredients:

1 cup flour
3/4 cup dark cocoa powder
1/4 teaspoon salt
1/2 teaspoon baking soda
10 tablespoons butter, at room temperature
1 cup sugar
1 egg
1 teaspoon vanilla
1 bag Hershey's Raspberry Bliss Chocolates, chopped

Directions:

Mix the flour, salt, cocoa powder, and baking soda together in a small bowl.

Cream the butter and sugar together in a large bowl. Add the egg and vanilla, beat for one minute. Slowly mix in the dry ingredients and beat on low speed until well combined. Stir in the chocolates and let the dough chill in the refrigerator for 1 hour.

Preheat the oven to 350. Line cookie sheet with a silicone mat.

Drop cookies by teaspoons into the cookie sheet, 1 1/2 inches apart. Bake for 9 minutes and let cookie on cookie sheet for 5 minutes before moving them to a cooling rack to cool completely.
