Banana Cake

A few weeks ago my husband and I went to visit some friends who were house sitting for a neighbor. The location of the house was absolutely beautiful!

It had great views of the mountains.

A pond, where our husbands caught some fish for dinner.

And horses!

And my beautiful friend Meghan!

Oh, and I brought some banana cake. It was okay. I wanted to try something new but I like my banana bread way better. If you have a good banana bread/cake recipe, let me know! I love trying out new banana recipes!

Banana Cake

Adapted from Baking: From My Home to Yours

Serves 16

Ingredients:

3 cups flour
2 teaspoons baking soda
1/2 teaspoon salt
8 tablespoons unsalted butter (1 stick), at room temperature
1/2 cup unsweetened applesauce
1 cup sugar
1 cup Splenda
2 teaspoons vanilla
2 eggs, at room temperature
4 very ripe bananas, mashed
1 cup fat free sour cream

Directions:

Heat oven to 350.

Mix the flour, baking soda, and salt in medium bowl. Set aside.

Beat the butter, sugar, and Slpenda on medium for 1 minute. Mix in vanilla. Add eggs, one at time, beating for 1 minute after each addition. Next, mix the in applesauce. The batter will look curdled--it's okay! Mix in bananas on low.

Add in half of the dry mixture, followed by all of the sour cream, and then mix in the remaining dry mixture.

Pour into a greased bundt and bake for 65-75 minutes. Check after 30 minutes and cover the top with foil if it is getting too brown.

    yum I love banana bread! I tried Smitten Kitchen’s recipe and I think is pretty good! You can put anything you want in that banana bread and it will be amazing. I made it in a bundt pan and it worked perfectly. Recipe here: http://smittenkitchen.com/2006/11/speckled-for-the-freckled/

    What I see in this recipe you posted is that it must be really sweet! 1 cup of sugar + 1 cup splenda + 4 bananas + 1/2 cup applesauce. But maybe it doesnt come out that sweet…anyway thanks!

    The bread isn’t too sweet at all. Also, the applesauce is unsweetened; I have updated the recipe to reflect that.

    You could try using Ener-G egg replacer or using 1 tablespoon flax seed mixed with 3 tablespoons of water for 1 egg.
