Chocolate Mint Peanut Butter Blossoms
Looking for a last minute holiday cookie to add your cookie tray? Well look no further—peanut butter blossoms are a classic cookie that everyone loves!

I had forgotten how much I loved these cookies until I made these last weekend with my mother-in-law. My mom used to make these for me a kid but I hadn’t them in a few years. The peanut butter + chocolate combo is SO addictive!
We topped the cookies with both mint truffle Kisses and regular Kisses. The mint Kisses tasted great with the peanut butter and made them feel more Christmas-y. The mint Kisses do melt a little more than the regular Kisses but don’t fear–they still taste great!

Peanut Butter Blossoms
Adapted from Hershey's
Makes about 4 dozenIngredients:
48 Heryshey's Kisses (regular or mint)
1/2 cup shortening
3/4 cup peanut butter, creamy or chunky (we used chunky)
1/3 cup granulated sugar
1/3 cup packed light brown sugar
1 egg
2 tablespoons milk
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
Granulated sugar, for rollingDirections:
Heat oven to 375°F. Unwrap chocolates.
Beat shortening and peanut butter in large bowl until well blended. Add 1/3 cup granulated sugar and brown sugar; beat until fluffy. Add egg, milk and vanilla; beat well.
In a seperate bowl stir together the flour, baking soda and salt. Gradually beat into peanut butter mixture.
Shape dough into 1-inch balls and roll in granulated sugar.
Bake on ungreased cookie sheet for 8 to 10 minutes or until lightly browned. Immediately press a chocolate into center of each cookie (cookies will crack around edges!). Place on cooling rack to cool completely.
