Spice Cake Ice Cream

Every Christmas, for as long as I can remember, my mom has given me an ornament that reflects my personality or interests. I saved these ornaments and they now decorate my husband and I’s tree, along with some ornaments that Ryan was given while he was growing up. Looking at all the ornaments on the tree makes me realize two things: we have an extremely eclectic collection of ornaments; and these ornaments really show how different my husband and I are.

For example: I like to bake

And Ryan likes to hunt.

I like bright, shiny, sparkly things

And Ryan likes camo.

Ryan likes to bird watch (um, NERD)

And the only bird I have an interest in watching is this flamingo.

While eating s’mores.

But dispite all our differences, we really do make a great team.

Here is the spice cake mix recipe that Ryan helped shoot the video for. It’s super easy and full of holiday flavors.

Now tell me, which ornament that you own best reflects your personality?

Spice Cake Ice Cream

Makes about 4 servings

Ingredients:

2 cups 2% lactose free milk
1 1/2 cups lite whipped topping, thawed
1 cup spice cake mix

Directions:

Mix together the milk, whipped topping, and spice cake mix in a large bowl. Do not worry if the whipped topping is not completely incorporated. It will become smooth once churned in the ice cream maker.

Pour the mixture into an ice cream maker and free according to the manufacturer's directions. Ice cream can be served immediately or stored in the freezer.

    I love all your cute ornaments! I started a similar tradition with my kids when they were born (which reminds me, I still need to find one for my son this year). I’m afraid most of our other ornaments are pretty generic, but my mom still puts up one I made when I was four – a styrofoam plate, spray painted gold with a cute (according to me) photo of me glued in the center. :-)
