Vegan Cheesecake {Giveaway}

 

As I mentioned in my previous post, I am avoiding processed sugar and flour and adopting a vegan diet. I was very excited to make this cheesecake as it’s been YEARS since I’ve had cheesecake! My lactose intolerance has kept me from enjoying cheesecake like I want.

The ratio of cheesecake to crust is excellent, with the perfect amount of thick graham cracker crust to the creamy cheesecake.

I made this cheesecake as part of a date night at home. Wanchai Ferry sent me their Orange Chicken Dinner Kit as well as a gift card to buy items for a date night at home. I  purchased some wine and the ingredients to make the cheesecake and had a wonderful night in with my husband. The orange chicken was quick and easy to fix and my husband loved it! Obviously, it’s not a vegan dish, so I wasn’t able to eat any but made my own version to eat instead. I’ve had this dish before I went vegan and love it–it’s cheaper and as good as take-out!

While I’m not planning on being vegan forever, I am hoping to incorporate what I learn into my baking. So, I need your help: do you know of any great vegan baking blogs or books? I am in need of inspiration and would love to see some new recipes!

Vegan Cheesecake

Adapted from The Kind Diet
Serves 8

Ingredients:

For the crust:
3/4 cup Earth Balance, melted
2 cups graham cracker crumbs (12-13 whole crackers, crushed in food processor)
1 packet of Stevia

For the cake:
12 oz light silken tofu
1 cup non-dairy sour cream
1 tablespoon canola oil
1/2 cup pure maple syrup
2 packets of Stevia
1/4 cup unsweetened coconut milk
2 teaspoons arrowroot
1 teaspoon vanilla bean paste
1/2 teaspoon lemon extract

Directions:

Preheat oven to 350. Oil a 9" springform pan.

Mix melted butter and graham cracker crumbs in a small bowl. Press the mixture into the bottom and sides of the pan. Bake for 5 minutes and let cool.

Combine all the cake ingredients in a food processor until smooth. Pour the mixture into the crust and smooth the top.

Bake for 45-50 minutes and let cool to room temperature before putting in the fridge to chill. Serve with a berry topping!

    This looks beautiful. It’s great that you could treat yourself with something you haven’t had in a while, but still remain healthy. I’ve been doing the same thing (cooking healthy vegan/vegetarian dishes) for dinner, but I think it’s time I try doing that for baked goods too.

    Your Cheesecake looks yummy! My worst date was a blind-date with this older guy, who was a friend of a friend. My car ended up breaking down at his house, where he still lived with his parents, in the middle of no-where. We totally had no chemistry or connection, and I was forced to hang out with him, watching him play video games until my dad showed up to help fix my car. It was aweful!

    I Liked you on Face Book but I do not Tweet :( . . Ive only been on first date with one guy and it was magical! He is now my fiance JAMES :) .. We haven’t been on too many bad dates, other than the one time we went to the movies and a fight broke out!! But that didn’t make the date bad, it made it a little more interesting!
    I agree with ALL the comments above that the cheese-cake look AMAZINGLY good!!

    My worst date ever was to a Homecoming college dance with a super boring nerdy guy. He was cute, but I was just so miserable because for some reason he repulsed me…I ended up asking him to take me home before the planned ice cream social at his apartment…A few years later I took care of his wife after she had her third baby! (I am a nurse) – awkward!

    Our worst date was actually the first time my husband and I were supposed to go out. This was many years ago, before cell phones. He broke down in his pickup and wasn’t near a phone and couldn’t call me so I just thought I got stood up on our first date.

    worst date: on the 3rd or 4th date, after having dinner we met up with a couple of my friends at a bar. he drank a little too much and i had to take care of him for the rest of the night and had to sneak him back into his parents’ house…not fun!!

    In terms of bad dates, I once went out to dinner and a movie with a guy. The date seemed ok, but that evening he told me he needed to DTR me (define the relationship? ew), and told me he had feelings for my friend. UGLY

    I went on a date to a baseball game and we ended up not going because we had parked far away and once we got there they said we couldn’t take umbrellas in…Well, this guy had borrowed his dad’s umbrella, that was “antique” and he didn’t want to leave it outside. So then we went out for ice cream and he dropped me off home. :(

    The cheezecake looks delicious! One of my favorite vegan baking books is More Great Dairy Free Desserts by Fran Costigan. She teaches a vegan baking class at the Natural Gourmet Institute and the book has a lot of vegan baking technique and tips. Also 1000 Vegan Recipes by Robin Robertson has some great dessert recipes- the carrot cake recipe (minus allspice) always gets rave reviews!
