Peppery Carrot and Potato Bread

I haven’t made bread in several months and it decided it was time to switch out our normal wheat bread for something different. This loaf is made in a bread machine so it comes together without much effort at all–perfect for the lazy baker in all of us.

This bread is slightly spicy and has a nice little splash of color from the carrots. My husband was a bit wary of the bread at first since it contains carrots, but he loved it! You can’t taste the carrots at all. I promise.

Peppery Carrot and Potato Bread

Makes 1-1lb loaf
Adapted from Betty Crocker's New Recipes for Your Bread Machine

Ingredients:

1 1/8 cup water
2/3 cup shredded carrots
3 cups of bread flour (or unbleached all-purpose flour)
1/2 cup dry potato flakes
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 tablespoon evaporated cane juice
1 1/2 teaspoons yeast

Directions:

Put all ingredients in bread machine. Set on basic cycle, light crust.

Go lay on the couch for 3 hours, or go shopping, or whatever. Come back to a wonderfully smelling house. Then have a slice of this bread.

    I love the sound of this bread, I would never have thought of adding carrots! I love any way to add veggies to things:)
