White Cake

Although today is Mother’s Day, I actually made this cake for my dad. My dad’s birthday was this past Thursday and I had my family over to celebrate.

When I asked my dad what type of cake he wanted for his birthday the conversation went something like this:

Me: What kind of cake do you want?

Dad: White cake.

Me: So, you mean vanilla?

Dad: No, white cake. Not yellow. Not chocolate. White cake.

Uh, dad, I think white cake is vanilla :) .  So I made this cake, with vanilla, in honor of my dad.

And bonus!! It’s completely vegan. My non-vegan family loved it and had no clue it was vegan.

Vegan cakes don’t rise as well as normal cake so I used apple cider vinegar to help the batter rise. I may have  put too much in since I thought the cake had a oh-so- slight vinegar flavor after baking. Maybe that is common with vegan cakes? I don’t know. Anyway, the cake itself is not real sweet, which makes it the perfect partner for lots of frosting.

White Cake

Ingredients:

For the cake:
3 cups unbleached flour
2 cups evaporated cane juice
1 teaspoon salt
2 teaspoons baking soda
1/2 cup + 2 tablespoons canola oil
2 tablespoons apple cider vinegar
Seeds from 1 vanilla bean
2 1/2 cups water

For the frosting:
3/4 cup shortening
3/4 cup Earth Balance
4 3/4 cups powdered sugar
1 1/2 teaspoons vanilla bean paste (or extract)
1/4 cup + 2 tablespoons almond milk

Directions:

For the cake:

Preheat oven to 350. Spray two 9 inch round cake pans.

Mix together the four, sugar, baking soda, and salt. In another bowl mix the oil, vinegar, vanilla bean seeds, and water with a mixer on low until combined.

With the mixer on low, slowly add the dry ingredients to the wet and continue mixing until combined. Divide the batter evenly between the two pans.

Bake for 25-30 minutes. Let cakes cool for 10 minutes in the pans before removing to cooling rack.

For the frosting:

Mix the shorterning and Earth Balance together with a mixer on medium, until very fluffy (about 2 minutes). With the mixer on low, add the sugar and beat for 3 minutes. Add the vanilla paste and milk and beat on medium for 7 minutes. The frosting should be very smooth and fluffly.
