No Bake Peanut Butter Bars

It has been waaaaaay too hot here lately to turn on my oven. My apartment stays at 80 even with the AC on, which is why I decided to make these no bake bars.

I originally wanted to use graham crackers to make these  but I ended up using rice krispies since I that’s all I had on hand.

These bars are quick and easy  and are perfect to make when you don’t want to heat up the house by turning on the oven.

No Bake Peanut Butter Bars

Makes 8 bars

Ingredients:

5 cups rice krispies, processed into crumbs
1/3 cup evaporated cane juice
1/2 cup +1 tablespoon peanut butter
4 tablespoons vegan margarine (like Earth Balance), melted
2 tablespoons agave
1 teaspoon vanilla
Chocolate chips, melted, for drizzling

Directions:

Mix all ingredients together in a bowl. If the mixture is too cumbly to hold together, add a little more of either peanbut butter, agave, or margarine. Firmly press the mixture into a 8 or 9 inch loaf pan. Drizzle the melted chocolate over the bars. Refridgerate for at least 30 minutes before serving.

    I want to make these for a playgroup, but what is evaporated cane juice and where do I buy it?

    Evaporated cane juice is a type of unrefined sugar. You can find it in most major grocery stores. If not, just replace it with regular white sugar.

    Just as a heads up, the vegan tag on these is only correct depending on how lax one is with one’s veganism. Rice Krispies are fortified with an unmarked D vitamin, which leads me to believe that it’s D3. D3 is derived from cholecalciferol, which in turn is made from irradiated lanolin. Lanolin is an oil found in sheep’s wool and is therefore cultivated during brutal and sometimes fatal shearing processes. I figured I’d put it out there.

    You could try replacing it with honey or brown rice syrup.
