Whole Wheat Pancakes
Last weekend my husband wanted something sweet for breakfast and requested pancakes. It’s a rare occasion that my husband craves anything sweet for breakfast, so I jumped at the chance to make them.
While these are make with wheat, they are still light, fluffy, and very delicious.


This was my husband’s plate. You see all that butter on top? He put that much butter on top of each pancake on this plate. I think he is somehow related to Paula Dean.

And on a side note, the doctors finally figured out what’s wrong with me and I’m on medicine that’s making me feel better. So while I will continue to stick with a mostly vegan diet, I will start to incorporate some butter and eggs back into a few of my recipes.
Whole Wheat Pancakes
Makes 8 pancakes
Ingredients:
1/2 cup whole wheat flour
1/2 cup whole wheat pastry flour
1/8 cup evaporated cane juice
Pinch of salt
1 teapsoon baking powder
1 teaspoon vanilla
2 teaspoons canola oil
3/4 cup unsweetened coconut milkDirections:
In a large bowl, mix together the flours, sugar, salt, and baking powder. In a smaller bowl, mix together the vanilla, oil, and coconut milk. Pour the wet mixture into the dry and stir until JUST incoporated. If batter is too thick, add a little more milk to thin it out.
Pour batter onto greased griddle or pan and cook until lightly browned on each side (about 3-4 minutes).

YUM! Did you use So Delicious coconut milk to make these or the canned coconut milk?

I used So Delicious but canned coconut milk would work too!

Those look super fluffy and moist! I just had breakfast, but looking at these is making me hungry again.

My daughter could live on pancakes… we haven’t tried any with coconut milk though, I think these would be a hit! These might be our first day of summer vacation treat!
