Chocolate Apple Butter Muffins

Every time I open the refrigerator door, it’s there. Staring me down.

I glance quickly at it and think “oh I need to use that up soon.” I push it to the back of the shelf, grab what I need and close the door. However, it always seems to find its way to the front again. That jar of apple butter.

I’ve been doing that for the past 9 months. <—-Note: it was an unopened jar. An opened jar for 9 months? Gross.

Well, I finally got around to using up that jar of apple butter that someone gave me for Christmas. Christmas, people!

The reason it took me so long to use it (other than procrastination) was because I wanted to make something other than apple cake with and that’s all I could ever think of. I was very excited when Anna posted this recipe. I never would have thought to make chocolate muffins using apple butter.

These babies are slightly dense and very chocolatey. They have a hint of apple butter taste fresh out of the oven but once they cool completely you can’t taste it.

I really enjoyed these and have made several batches since (it was a BIG jar of apple butter!).  And since these are muffins, it’s a perfectly acceptable way to eat chocolate for breakfast.

Chocolate Apple Butter Muffins

Makes 6 muffins
Adapted from Cookie Madness

Ingredients:

3/4 cup plus 2 tablespoons unbleached flour
1/2 cup unsweetened dark cocoa powder
1/2 teaspoon baking soda
1/2 teaspoon baking powder
3/8 teaspoon salt
1/4 teaspoon cinnamon
1/3 cup packed brown sugar
1/2 cup apple butter
1 large egg, beaten
3/4 teaspoon vanilla
2 generous tablespoons vegetable oil
1/4 cup mini semisweet chocolate chips

Directions:

Heat oven to 350. Line or spray 6 muffin cups.

In a large bowl mix the flour, cocoa, baking soda, baking powder, salt, and cinnamon.

In another large bowl mix together the brown sugar, apple butter, egg, vanilla, and oil. Combine the dry mixture into the wet and stir until just combined. Do not over mix. Gently stir in the chocolate chips.

Pour batter into prepared muffin pan and bake for 20 -23 minutes.

    These look like the deepest chocolatey muffins ive ever seen! Those cases are just so cute and go perfectly, kooky little treats :) what i would give to have a good few of these for brekkie! :)
