Unfortunately, I have been sick for most of last week and this week. Since I haven’t felt up to baking, I thought I would post some blueberry scones I made a few months ago and never got around to posting.
Did you know this month was National Peanut Butter Lovers Month? Neither did I until I heard it mentioned on the radio yesterday! Good thing I made these peanut butter blondies to celebrate!

In honor of fall, the folks at Pillsbury were kind enough to send me a box of apple themed goodies along with a coupon for their refrigerated pie crust. Although I have made other types of apple pie, I had yet to make a traditional apple pie. This recipe was quick, simple, and delicious!
Ah! I made a video for Moovision.com for their Gourmoo cookoff contest. I look like a total nerd in the video; I can barely stand to watch it! Besides that fact that I look like a dork in the video, I show you how to make some really easy ice cream: spice cake mix ice. This ice cream is so delicious—it’s like Christmas in your mouth! I am SO glad the great pumpkin shortage of this past year is over. It was a very dark and sad time in my life without pumpkin. I held on tight to my last can of pumpkin for months, not wanting to waste it on just any dessert. Since the shortage is over, I felt it was okay to finally use my last can to make these cupcakes. Although it is fairly simple recipe, the results are nothing short of amazing.
It had great views of the mountains.
I am sad that fall is officially here and the warm weather is fading away all to quickly. Fall reminds me that winter is not too far behind, and while I enjoy the holiday season that is right around the corner, I absolutely hate the cold weather. Cold weather makes me want to stay inside and waste the day away on the couch under a warm blanket.
Growing up, I always assumed I didn’t like peaches. I’m not sure exactly why; maybe it was the fuzz? When I finally tried my first peach sometime in my teenage years, I realized what I had been missing out on and I’ve been hooked on them ever since! While I normally like eating them in their natural state, they sure do make some delicious ice cream!
